2tablespoons (28g)unsalted buttermelted and cooled to room temperature
2tablespoonsgranulated sugar
2tablespoonshalf and half
¼teaspoonvanilla extract
¼cup (37g)gluten free flour blend
¼teaspoonbaking powder
⅛teaspoonsalt
For the cinnamon sugar topping:
½tablespoongranulated sugar
¼teaspooncinnamon
Instructions
In a microwave-safe mug, mix the melted butter with the sugar, half and half, and vanilla extract. Add the flour, baking powder, and salt and mix well to combine. You may need to scrape the bottom of the mug to ensure all of the flour has been incorporated.
To make the topping, combine the sugar with the cinnamon in a small bowl. Sprinkle half of the mixture on top of the cake batter.
Heat the mug cake in the microwave for 60-70 seconds. After removing from the microwave, sprinkle the remaining cinnamon sugar on top. Serve immediately.
Notes
If you don't have half and half, you can also use whole milk.
