Ingredients
For the donuts:
1 ½cups (222g)gluten free flour blend
2teaspoonsbaking powder
½teaspoonbaking soda
¼teaspoonsalt
⅓cup (67g)granulated sugar
3tablespoons (42g)unsalted buttermelted and cooled
1cup (225g)plain Greek yogurtroom temperature
¼cup (60ml)milkroom temperature
2tablespoonslime juice
1teaspoonlime zest
For the glaze:
1cup (120g)powdered sugarsifted
2tablespoonslime juice
gluten free graham cracker crumbsoptional
Instructions
Preheat oven to 350°F. Grease donut pans and set aside.
In a small bowl, whisk the flour, baking powder, baking soda, and salt together. Set aside.
In a separate bowl, mix the sugar with the melted butter. Add the yogurt, milk, lime juice, and lime zest and mix to combine. Add the dry ingredients into the wet ingredients and stir until just combined.
Pipe or spoon the batter into the prepared donut pants. Bake for 12-14 minutes. Allow donuts to cool in the pan before removing and glazing.
To make the glaze:
Stir together the powdered sugar and lime juice. If the mixture is too thick, add more lime juice (one tablespoon at a time).
Gently dip each donut into the glaze and immediately top with graham cracker crumbs, if using. Allow glaze to set before serving.
